
You will need:
- 1 Tilapia fillet about 2.5 centimeters thick.
- 1 teaspoon of my easy peasy dry rub (https://corriecooks.home.blog/2019/03/05/easy-peasy-lemonsqueezy-dry-rub/)
- 2 teaspoons of cooking oil.
For the sauce:
- Half a teaspoon of finely chopped chives
- Half a teaspoon of finely chopped dill
- The juice of half a medium sized lime
- 1 heaped tablespoon of mayonnaise
- A dash of black pepper
Score the fish fillet diagonally on both sides and coat it thoroughly with the dry rub. Put the oil in your pan and heat slightly. Add your fish and cook on high heat for about 5 minutes on each side . Cooking on high heat creates a crispy exterior which prevent the inside from getting too dry.
While the fish cooks, combine the ingredients for the sauce in a bowl and mix with a whisk.
That’s it! I prefer to have my sauce on the fish as opposed to on the side.
Tip:
If you add a teaspoon of ketchup to this sauce, it becomes a delicious chip dip. Try it some time.
