Summer Mango Salad

You will need:

  • A ripe (but firm) mango
  • 2 tomatoes
  • 1 golden onion
  • 1 large cucumber
  • 1 green capsicum
  • 1 bunch of coriander
  • Salt
  • Black pepper
  • 1 tbsp Olive oil
  • 4 tbsp freshly squeezed lemon juice

Dice the onion into a bowl and thoroughly coat with 2 tablespoons of salt- let it sit for 10-15 minutes then rinse with hot water. We are doing this to flavour the onion and remove the sulfury flavour. After rinsing, pat dry with a paper towel and transfer into a dry bowl.

Chop the rest of the ingredients into cubes and add to the onions. I prefer to peel and de-seed my cucumber, but you do you 🙂

Mince the coriander and add to the bowl. Add salt, pepper, olive oil and lemon juice, then mix well.

That’s it! Chill, serve, and enjoy.

Tip: Combine all the salad ingredients in your bowl and only mix at the end. This ensures your salad does not get soggy due to over-agitation.
